Domaine William Fèvre Saint-Bris Sauvignon Blanc comes from the only appellation in Burgundy given over to Sauvignon Blanc.
Saint-Bris-le-Vineux lies a short distance south-west of Chablis, near Auxerre, among the scattered vineyards of the Yonne. Sauvignon Blanc has been grown here for generations on the same Kimmeridgian limestone and marl that runs beneath Chablis, an oddity in a region otherwise devoted to Chardonnay and Pinot Noir. The wine was sold as a VDQS for decades and was promoted to full appellation status in 2003, making it the newest AOC in Burgundy. This is a cool, northern site, a good deal further from the sea than the Loire villages usually associated with the grape, and the wines are generally made in a direct style, fermented and raised in stainless steel to keep them fresh.
Serve well chilled, at around 9 to 10 degrees, with goat's cheese, asparagus or grilled fish; it is made for drinking young.
