Domaine Yves Cuilleron Saint Joseph 'Cavanos' Syrah 2024

Domaine Yves Cuilleron Saint Joseph 'Cavanos' Syrah is a dark, brambly red from hillside terraces above the village of Chavanay.

Cavanos is the old form of Chavanay, the only village in this appellation sitting on muscovite granite. Vines of twenty to forty years are picked by hand and fermented on their own yeasts in cooled open-top tanks for about three weeks, with malolactic and sixteen months in wood to follow.

Sour cherry and dense dark berry fruit arrive with a curl of classic Syrah smoke, then velvety tannins carry a long close. Pour at 16°C with chorizo risotto, a chicken supreme or grilled pork.
