Fiadone (Corsican Lemon Cheesecake)
Ingredients:
- 500g brocciu or ricotta cheese
- 4 eggs
- 150g sugar
- Zest of 1 lemon
- 1 tbsp lemon juice
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 180°C. In a bowl, whisk together cheese, sugar, lemon zest, juice, vanilla, and eggs until smooth.
- Pour into a greased baking dish and smooth the top.
- Bake for 35–40 minutes until golden and set. Let cool completely.
- Serve chilled with a glass of Domaine Yves Leccia Altru Biancu' for a refreshing Corsican finish.
