Domaines Ott Château Romassan is a Bandol rosé, built on Mourvèdre as the appellation requires.
Bandol is the one Provençal appellation with real structure, and its rules demand a high proportion of Mourvèdre, a late-ripening variety that needs the heat of these south-facing terraces above the Mediterranean to ripen at all. Château Romassan sits inland from the coast at Le Castellet. The Ott family has held the property since the 1950s; the house itself dates to 1896.
Serve at 11 degrees with grilled meats, bouillabaisse or roast chicken. It will hold for five years, unusual for a rosé.
