Description
Dr. Bürklin-Wolf Rechbächel Riesling is a monopole, a small sheltered Wachenheim site owned outright by the estate.
Rechbächel runs to a little over a hectare and a half, lying in a narrow, sheltered hollow on the Wachenheim slope, and belongs entirely to Dr. Bürklin-Wolf. The soils are weathered sandstone with loam, and the enclosed aspect makes the site warm while it still holds its acidity. The estate ranks it P.C., its own term for Premier Cru, within the Burgundian hierarchy Bettina Bürklin-von Guradze reinstated from the domaine's nineteenth-century classification. Vineyard work is biodynamic and Demeter certified. Fruit is picked by hand, whole-bunch pressed and fermented with wild yeasts in traditional large oak, then aged on fine lees for several months before a dry bottling. Quantities are small.
Dry, concentrated and slow to unwind, and it rewards time in bottle; serve at 11 to 12 degrees with roast veal, poultry, or mature hard cheese.
