Equipo Navazos Casa del Inca Pedro Ximénez 2021

Equipo Navazos Casa del Inca is a naturally sweet Pedro Ximénez from Montilla-Moriles, made in the old style as a vintage wine without long oxidative ageing.

Equipo Navazos began as a bottling project selecting exceptional casks from Andalucían bodegas, and Casa del Inca looks back to the era when Pedro Ximénez was released young, before decades in cask brought the rancio character of the solera wines. It is made in partnership with the highly regarded Pérez Barquero family in DO Montilla-Moriles, from late-harvested PX grown in one of Montilla's best vineyards and dried until raisined. Fortification uses only top-quality grape spirit. The wine then rests for eighteen months in tinajas, the large cone-shaped clay vessels used in Montilla for centuries, rather than in oak butts. Bottled with around 430 grams of residual sugar, it is amber rather than opaque black, and its acidity keeps the sweetness in balance.

Ready now and effectively indestructible; like the solera PX, it keeps for a very long time in the fridge once opened. Serve at 8–10°C with coffee, chocolate desserts or an aged hard cheese.
