Equipo Navazos I Think Manzanilla Saca Feb is an en rama manzanilla bottled straight from a selection of casks at La Guita.

Manzanilla is the Sanlúcar de Barrameda expression of Palomino, aged under a veil of flor yeast in bodegas cooled and humidified by the Atlantic. Equipo Navazos began as a cask-selection project run by Jesús Barquín and Eduardo Ojeda, who taste through established soleras and bottle individual butts with as little handling as possible. This release was drawn from a selection of some sixty casks at La Guita, one of the largest and most respected manzanilla houses, where Ojeda oversees production in his role as technical director at José Estévez. The wine had around four and a half years under flor and was bottled en rama in February, that is, direct from cask without the sterile filtration that became standard in Jerez. That accounts for its deeper colour and its greater flor-derived depth compared with most manzanilla on the market. It is bottled at 15% alcohol in a 375ml format.

Manzanilla is at its best young and freshly opened, so keep the bottle in the fridge and finish it within a few days, with olives, almonds, prawns or jamón. Serve at 8°C.
