Equipo Navazos La Bota 48 Palo Cortado Bota Punta is a single-butt palo cortado drawn from the end cask of an old Sanlúcar solera.
Palo cortado begins life as a fino under flor and then loses its veil, finishing its ageing oxidatively, which is why it carries the aromatic lift of a biologically aged wine with the body of an amontillado or oloroso. A bota punta is the barrel at the end of a solera row; because it is topped up from other butts in the same solera rather than from the criadera above, its contents drift away from the house style and become something singular. This bottling comes from the Gaspar Florido GF-30 solera, whose casks — the Bota NO and the bota punta used for La Bota numbers 47 and 48 — are now kept at the Sacristía of Pedro Romero, very near their original home. Jesús Barquín and Eduardo Ojeda sampled them exhaustively before selecting for these editions. It is bottled in 375ml.
Serve it at 12–14°C in a decent-sized glass, with aged cheese, jamón, oxtail or a bowl of consommé; opened, it will hold in the fridge for a week or two.
