Description
Eric Bordelet Sydre Brut Tendre is the estate's everyday Normandy cider, blended from traditional cider apple varieties.
Eric Bordelet left a career as a sommelier in Paris to take over the family orchards at Charchigné, where roughly twenty hectares of old apple and pear trees are farmed organically and by biodynamic principles on schist and granite. Brut Tendre blends bittersweet and bittersharp cider apples from across the property. The fruit is pressed whole, settled, and fermented very slowly on wild yeast through the cold months, then bottled while sugar remains so that the sparkle arises naturally in bottle. No sugar, gas or cultured yeast is added. The cider finishes just off dry at around 5% alcohol.
An easy, gently sparkling cider for the aperitif, for galettes and charcuterie, or with soft cheese; serve chilled at around eight degrees.
