Description
Fabien Coche Saint-Romain blanc comes from one of the highest and coolest white wine appellations of the Côte de Beaune.
Saint-Romain lies in a cool side valley behind Auxey-Duresses, hemmed in by limestone cliffs, with vineyards climbing to over four hundred metres. It is among the latest-ripening appellations of the Côte de Beaune, and its whites are correspondingly taut, with cutting acidity and a chalky, almost saline finish rather than the breadth of Meursault. Fabien Coche is based in Meursault and works parcels through these upper valleys; the domaine's approach is consistent across the range, with whole-bunch pressing, barrel fermentation, restrained new oak and extended ageing on fine lees to build texture without obscuring the site. The bottle is closed with Diam.
Lean and chalky, it is a natural match for oysters, ceviche and fresh goat cheese; serve at around 11 degrees.
