Feudi di San Gregorio Falanghina del Sannio DOC is a bright, elegant white from Campania that showcases the freshness and finesse of this historic southern Italian grape. Produced in Sorbo Serpico, in the province of Avellino, this wine reflects the cool breezes and elevated vineyards of the Sannio area.
In the glass, it shows a straw-yellow colour with brilliant green reflections. The nose is intense and persistent, opening with delicate white flowers, citrus and fresh orchard fruit. On the palate, it is clean, fresh and well-balanced, with lively acidity and a crisp, refreshing finish.
Versatile and effortlessly drinkable, this Falanghina is ideal as an aperitif and pairs beautifully with simple fish dishes, vegetables and fresh cheeses.

Pesce all’Acqua Pazza (Fish in “Crazy Water”)
Ingredients:
- 4 white fish fillets (snapper, bream or barramundi)
- 2 tbsp extra virgin olive oil
- 2 garlic cloves, thinly sliced
- 200g cherry tomatoes, halved
- 100ml dry white wine
- 100ml water or light fish stock
- Fresh parsley, chopped
- Salt and cracked black pepper
Instructions:
- Heat the olive oil in a wide pan over medium heat and gently warm the garlic until fragrant.
- Add the cherry tomatoes and cook briefly until they begin to soften and release their juices.
- Pour in the white wine and water, allowing the liquid to simmer for a few minutes.
- Season the fish lightly and place the fillets into the pan, spooning the broth over the top.
- Cover and cook gently for 6–8 minutes until the fish is just cooked through.
- Finish with chopped parsley and cracked black pepper, then serve immediately with crusty bread.
The light, aromatic broth and fresh tomato flavours highlight Falanghina’s citrus brightness, floral lift and crisp acidity, creating a classic Campanian pairing.
