Insalata di Pollo e Verdure Grigliate (Tuscan Chicken & Grilled Vegetable Salad)
Ingredients:
- 2 chicken breasts
- 1 zucchini, sliced
- 1 red capsicum, sliced
- 1 eggplant, sliced
- 3 tbsp extra virgin olive oil
- 1 lemon (juice)
- Fresh basil leaves
- Salt and cracked black pepper
Instructions:
- Season the chicken with olive oil, salt and pepper and grill until cooked through, then slice.
- Grill the zucchini, capsicum and eggplant until tender and lightly charred.
- Arrange the vegetables and sliced chicken on a serving plate.
- Drizzle with olive oil and fresh lemon juice.
- Scatter over basil leaves and finish with cracked black pepper.
The fresh vegetables and citrus dressing highlight the wine’s crisp acidity and clean fruit profile, while the light grilled chicken adds just enough substance without overpowering the Chardonnay.
