Gerard Boulay Sancerre à Chavignol 2020

Gérard Boulay's à Chavignol is a Sancerre made entirely from limestone sites in and around the hamlet of Chavignol.

Chavignol lies in a steep bowl west of Sancerre, best known for the Kimmeridgian slopes of Les Monts Damnés, Le Cul de Beaujeu and La Grande Côte, and for the goat's cheese that carries its name. Boulay farms organically and the fruit here comes from mature vines of thirty-five to forty years, rooted entirely in Chavignol limestone. Most of the parcels are sloping sites on the lower flanks of the hillside, in Les Chasseignes, Les Longues Fins and La Rue de Vaux, but the wine also takes in fruit from his younger vines on the great hillsides above. The juice was fermented with natural yeasts and aged for nine months in tank on its lees, with a small volume fermented in a single large wooden cask.

Drinking well now and good for four or five years; serve at 10-12°C with Crottin de Chavignol, grilled fish or asparagus.
