Guffens-Heynen Pouilly-Fuissé 1er Jus des Croux 2017

This is the first-press juice from Les Croux, one of Guffens-Heynen's tiny, rocky, south-facing parcels at the foot of the Roche de Vergisson.

Pouilly-Fuissé takes in the villages beneath the limestone outcrops of Solutré and Vergisson at the southern end of Burgundy. Jean-Marie Guffens and Maine Heynen came from Belgium to Vergisson in 1976 and bought their first vines at Pierreclos in 1979; the domaine still amounts to only about 5.65 hectares of Chardonnay split between Vergisson, Pierreclos and Davayé. Its Pouilly-Fuissé holding is roughly a hectare across a handful of Vergisson climats, of which Les Croux is one, sitting beside the walled Clos des Petits Croux. Guffens works the vines with a single shallow ploughing a year, cover crops mown rather than sprayed and no de-leafing or hedging, which holds yields to around 30 to 40 hectolitres per hectare. Picking is late and made in successive passes, pressing is slow on a modified Coquard press, and the 1er Jus bottlings take only the first-run juice, lower in pH and higher in acidity.

Worth several years in the cellar; serve at 10-12°C with roast chicken, scallops or comté.
