Gundog Estate The Chase Semillon is a taut low-alcohol Hunter white made with the cellar in mind.

Mature vines on Pokolbin clay loam give the fruit, which is pressed gently to between 450 and 550 litres a tonne, fermented cool and racked clear of the heavy lees. Two months in tank while still faintly cloudy knits the palate together, and only the lightest fining follows before bottling.

Lemongrass, lime and green apple run along a pure thread of natural acidity at just 10.4 per cent alcohol. Serve it at 8 degrees with oysters, steamed fish or salt and pepper squid, or put a few bottles away for five to ten years.
