Heathcote Estate Pressings Shiraz 2022

Heathcote Estate Pressings Shiraz is made from the wine pressed out of the skins after fermentation.

Free-run juice drains off under gravity; press wine comes from squeezing what remains, and it carries far more tannin, colour and structure. Most producers blend a little back; bottling it on its own is unusual and makes for a firmer, more demanding wine. The fruit comes from Heathcote's ancient greenstone soils in central Victoria.

Decant and serve at 17 degrees with aged beef, venison or hard cheese. It rewards a decade or more.
