Henriques & Henriques Monte Seco Extra Dry 3Yo NV

Henriques & Henriques Monte Seco Extra Dry 3Yo is the house's palest and driest madeira, intended as an aperitif or a mixer.

Madeira's dry styles are heated more gently and kept lighter in colour than the rich ones, and they retain the sharp acidity that is the island's signature. Henriques & Henriques, based at Câmara de Lobos, produces this three-year-old from Tinta Negra, the variety that accounts for most of Madeira's plantings and can be vinified across the full range of sweetness levels. Monte Seco is described as extra dry, though in practice it edges into off-dry, and it is deliberately light and pale. Like all madeira it has been heated and then rested in cask, a process that stabilises the wine so completely that an open bottle will last for months in the kitchen rather than days.

Serve well chilled at 8-10C, over ice with a twist of citrus, lengthened with tonic, or in cocktails; it also works with smoked salmon and cured ham.
