Henriques & Henriques Sercial 15Yo is a varietal madeira in the island's driest and most bracing style, aged by the canteiro method.

Sercial is the last of Madeira's noble whites to ripen and is planted at the highest, coolest sites, which is why it retains the searing acidity that defines the dry end of the island's range. Henriques & Henriques age their 15 Year Old wines at purpose-built lodges in Câmara de Lobos using canteiro rather than the heated estufa: casks are cellared for at least three years against south-facing windows, where the gentle natural warmth of the sun drives a far slower maturation. Over fifteen years this produces the tang, nuttiness and dry, almost saline finish characteristic of aged Sercial, with none of the cooked quality that quicker methods can leave. The wine is fortified and comes in a 500ml bottle.

It is ready on release and an opened bottle will keep for months. Serve chilled at 12°C as an aperitif with olives and almonds, or with sashimi, consommé or shellfish.
