Description
Hickinbotham The Revivalist Merlot is a serious varietal Merlot from the Clarendon vineyard in the McLaren Vale hills.
Merlot has a poor reputation in Australia, mostly because it was planted in the wrong places; on Clarendon's cool clay-over-ironstone slopes it ripens slowly and keeps structure, which is what the wine's name is getting at. The vineyard dates from 1971. The fruit is fermented in small open vessels and matured in French oak barriques.
Decant and serve at 17 degrees with duck, veal or mushroom dishes. It develops over twelve years.
