Description

Hickinbotham Trueman is a single-block Cabernet Sauvignon from the Clarendon vineyard above McLaren Vale.

Cabernet on Clarendon's cool hillside, planted on clay over ironstone in 1971, ripens later than the valley floor and keeps a firm tannin structure, closer in shape to Coonawarra or Margaret River than to the region's usual generosity. The wine is named for a figure in the vineyard's past. It is fermented in small open vessels and matured in French oak barriques.

Decant and serve at 17 degrees with roast lamb, aged beef or a hard cheese. It rewards fifteen years or more.
