Asparagus Risotto
Ingredients:
- 1 cup Arborio rice
- 1 bunch asparagus, trimmed and chopped
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1/2 cup dry white wine
- 4 cups vegetable stock, warmed
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a pan and sauté onion and garlic until softened.
- Add Arborio rice and toast for 2 minutes.
- Deglaze with white wine and let it absorb.
- Add vegetable stock gradually, stirring continuously.
- When rice is al dente, stir in asparagus and Parmesan. Season with salt and pepper.
- Serve immediately, garnished with extra Parmesan.
