Jean-Louis Chavy Bourgogne blanc is the regional Chardonnay of a small Puligny-Montrachet domaine, made in the same cellar and the same way as the wines above it.
Bourgogne blanc is the regional appellation for Chardonnay grown across Burgundy, and its quality depends almost entirely on where the fruit comes from and who makes it. From a Puligny-Montrachet domaine it usually means young vines or parcels just outside the village boundary, worked and vinified alongside the village and premier cru wines. Jean-Louis Chavy runs a small family estate in Puligny, taken on when the holdings of Gérard Chavy were divided between his sons, and the style is straightforward and precise: whole-bunch pressing, fermentation and ageing in barrel with very little new oak, and enough time on fine lees to give the wine some flesh without blurring its outline.
An honest, everyday white Burgundy for roast chicken, quiche and soft cheeses; serve at around 11 degrees.
