Bernkasteler Badstube Kabinett is Joh Jos Prüm at its lightest, a low-alcohol Mosel Riesling with only a touch of natural sweetness.
Kabinett is the first rung of the German Prädikat ladder, made from fully ripe but not late-picked fruit, and on the Mosel it yields wines of eight or nine per cent alcohol that are as much about tension as sweetness. Badstube is the collective site above Bernkastel, its weathered slate soils giving wines that are a little softer and more approachable than those from the steeper Sonnenuhr slopes. Joh Jos Prüm, at Wehlen, has been directed for decades by Dr Manfred Prüm and more recently by his daughter Katharina, and the house style is unmistakable: cool, reserved, sometimes closed in youth, and unusually long-lived for the Prädikat level. Grapes are hand picked in successive passes, whole bunches pressed, and the must fermented slowly with its own yeasts in stainless steel before bottling and a lengthy rest at the estate.
Drinkable now but noticeably better in two or three years, with fifteen ahead of it. Serve with sushi, chicken salad or lightly spiced Asian dishes at 8-10°C.
