Joh Jos Prüm Bernkasteler Badstube Riesling Kabinett 2022

Joh Jos Prüm Bernkasteler Badstube Riesling Kabinett is a Mosel Riesling from the slopes around Bernkastel, made in the low-alcohol, long-lived style the family has held to for over a century.

Badstube gathers the finest slopes immediately around Bernkastel on grey Devonian slate; it is the gentlest of the estate's holdings in character, giving wines that open a little earlier. Joh. Jos. Prüm has been based at Wehlen since 1911 and is now run by Katharina Prüm, working to a house style that has changed very little. Fruit is picked in successive passes so that each parcel comes in at the intended ripeness, whole bunches are pressed gently, and fermentation runs with ambient yeasts in stainless steel before stopping of its own accord, leaving the grape's own residual sugar. Kabinett is the lightest of the Prädikat levels, picked at modest must weights and finishing at around eight per cent alcohol with a delicate thread of residual sugar; the power builds steadily across the estate's sites from Bernkastel through Graach to Wehlen.

Mostly drunk young but good for five to ten years and more; serve at 8-10°C as an aperitif or with sashimi, tuna tartare, or lighter Asian dishes.
