Joh Jos Prüm Bernkasteler Badstube Riesling Kabinett 2023

Bernkasteler Badstube is the lightest and most delicate of the three Prüm village sites, and this is its Kabinett, the estate's lowest ripeness level and its most filigreed wine.

Badstube is a collective site on the slate slopes at Bernkastel, upriver from the estate's home at Wehlen. Across the Prüm range the power builds from Bernkastel to Graach to Wehlen, and Badstube is where the house style is at its most transparent. Fruit is hand-picked, and the musts ferment slowly and cool with the estate's own yeasts until they stop naturally, leaving modest alcohol and gentle sweetness in tension with slate-driven acidity. Katharina Prüm leads the estate, the fourth generation to do so, and the wines are held in the cellar before release rather than being pushed out young. The 2023 Kabinetts are already showing intensity, freshness and balance.

Mostly drunk young, though it will improve for five to ten years and twenty will not tire it. Serve at 8–10°C with sashimi, tuna tartare or lighter Asian dishes, or as an aperitif.
