Description
At Spätlese level the Prüm wines stay light in body but gain markedly in depth, and Badstube is the most delicate of the estate's three village sites.
Badstube lies on the slate slopes at Bernkastel, upriver from the estate's base at Wehlen, and across the range the power builds from Bernkastel to Graach to Wehlen. A Spätlese here carries more flesh and more fruit depth than the Kabinett without necessarily tasting sweeter, and the extra weight is what allows it to stand up to richer food; Katharina Prüm considers this the most versatile category at the table. Hand-picked fruit ferments slowly and cool with the estate's own yeasts and stops naturally, leaving the balance of elegance, racy fruit and savoury, slate-like minerality that defines the house. The wines are held at the estate before release.
Thrilling young and capable of gaining depth for decades. Serve at 8–10°C with pork belly, a fragrant curry or fresh crab.
