Joh. Jos. Prüm's Bernkasteler Lay Spätlese is a naturally sweet Mosel Riesling from a steep blue-slate site just downriver from the estate's better-known holdings.
Bernkasteler Lay is a slope of around fifty per cent gradient on weathered blue slate, and it gives Prüm's broadest and most assertive wines, rather fuller in texture than the estate's Wehlener Sonnenuhr or the delicate Bernkasteler Badstube. The house is based at Wehlen on the middle Mosel, where Sebastian Prüm set its reputation over nearly five decades and Katharina Prüm now works alongside her father Manfred. The method is settled and deliberately narrow: no dry wines are made at all, fermentation is entirely spontaneous, and the wines are bottled late and released with the faint yeasty note and dissolved carbon dioxide that always accompany them in youth. Spätlese here is light in body but concentrated in flavour, the residual sugar held in check by racy acidity, and the family are firm that even their lighter Prädikat wines want a decade or more.
Drinkable young but far better with five to ten years, and it will keep for decades; serve at 8-10°C with roast pork belly, smoked trout or a lightly spiced curry.
