Joh Jos Prüm Graacher Himmelreich Riesling Auslese in magnum is an Auslese from the Graach slate slope, in a format made for long cellaring.

Himmelreich occupies the hillside between Graach and Wehlen on grey-blue Devonian slate and is the largest of the estate's sites. At Auslese level Joh. Jos. Prüm looks for power and intensity rather than sweetness for its own sake: riper fruit, more flesh, more complexity and greater length, held within a style that stays pure and ultra-fine. The contrast with Wehlen, which is rounder and deeper, is at its clearest here. Fermentation is slow and cool, the wine keeps its natural sugar and low alcohol, and the estate releases later than most. A magnum reduces the wine's exposure to air relative to its volume, which suits a category measured in decades rather than years.

Ready to enjoy, though a magnum asks for patience. Serve at 8–10°C with pork, game bird, venison or a spread of cheeses.
