Joh Jos Prüm Graacher Himmelreich Riesling Auslese is an Auslese from the estate's largest site, the slate slope above Graach.

Himmelreich runs between Graach and Wehlen on grey-blue slate, and Graach is the racier and more citrussy of the two principal Prüm addresses. At Auslese the step up from Spätlese is one of power rather than sweetness — riper and more intense is the more accurate description — and the wine gains flesh, complexity and length while the style stays pure and ultra-fine. Auslese from this estate can be hard to read when very young, though a forward, fruit-driven harvest makes the task easier. The methods do not change: gentle pressing, long cool fermentation, natural residual sugar, low alcohol and a late release. Site character comes through more sharply at this level than at any other in the range.

Too fine for heavy desserts and better with savoury food. Serve at 8–10°C with roast chicken, savoury tarts, venison, or a Chinese or Japanese meal.
