Joh Jos Prüm Graacher Himmelreich Riesling Auslese Goldkapsel is a rare gold-capsule bottling from the broad slate amphitheatre above Graach.

Himmelreich stretches along the slope between Graach and Wehlen on grey-blue Devonian slate, and it is one of the three core sites of Joh. Jos. Prüm, alongside Wehlener Sonnenuhr and Zeltinger Sonnenuhr. Graach tends to give the racier, more citrussy and herbal side of the estate's range, where Wehlen is rounder and deeper. Goldkapsel is an estate designation rather than a legal one: Katharina Prüm describes these as limited-edition, small-production lots of the best Auslese of a vintage, made from stronger selected grapes with more concentrated juice, usually affected by a certain amount of botrytis. Only a small amount was made. Getting there took multiple passes through the vineyard and draconian selection at picking, and the step up in power and weight over a white-capsule Auslese is considerable. Fermentation stays long and cool and the alcohol stays low.

These age for many decades, shedding sweetness and gaining harmony as they go. Serve at 8–10°C with robust savoury dishes, spicy food, or a fruit-based dessert such as crème caramel.
