Joh Jos Prüm Graacher Himmelreich Riesling Auslese Goldkapsel is a half-bottle of the estate's rare gold-capsule Auslese from the slate slope at Graach.

Graacher Himmelreich is a wide, steep expanse of grey-blue Devonian slate running between Graach and Wehlen, and Joh. Jos. Prüm has worked it for a century. Site character comes through clearly across the range: Graach is the racier, more citrussy and herbal of the estate's vineyards, Wehlen the rounder and deeper. Auslese is picked late from riper bunches, and the gold capsule marks a further, unofficial tier within it — limited lots that call for several passes through the vineyard and draconian selection to catch fruit at precisely the right ripeness. The grapes are stronger and carry more concentrated juice, usually with a measure of botrytis, and the wine that results is markedly more powerful and weighty. Only a small quantity was produced. As always here, fermentation is unhurried, the sweetness is natural and the alcohol stays low.

A half-bottle will still age for decades, though it is tempting young. Serve at 8–10°C with savoury tarts, roast pork or a hard cheese.
