Joh Jos Prüm Graacher Himmelreich Riesling Kabinett is a classically off-dry Mosel Kabinett from one of the region's most closely watched estates, bottled here in magnum.

The Graacher Himmelreich lies on the steep left bank of the Middle Mosel between Graach and Wehlen, on weathered blue Devonian slate that holds warmth through the long, slow autumn ripening the region depends on. Joh. Jos. Prüm has been based at Wehlen since the estate took its present form in 1911, and successive generations have kept to a consistent house method: whole-bunch pressing, long cool fermentation with ambient yeasts, and extended settling in traditional Fuder casks with sulphur kept low and the wines left undisturbed on their fine lees. Fermentation is halted with natural sweetness still in the wine, so a Kabinett here carries modest alcohol against high, slate-driven acidity rather than any impression of weight. The 1.5-litre format slows development further, which suits a house style that is often reserved in its first years and rewards patience in the cellar.

Approachable young but built to run a decade or more in bottle; serve at 10-12°C with sashimi, Vietnamese herb salads or a mildly spiced Thai curry.
