Joh Jos Prüm Graacher Himmelreich Riesling Kabinett is a low-alcohol Mosel Riesling picked at Kabinett ripeness from a steep blue-slate site.

Graacher Himmelreich sits between Graach and Wehlen on deep, stony grey and blue slate, and sits between Badstube and Wehlen in weight and in the speed at which it opens. Joh. Jos. Prüm, at Wehlen on the middle Mosel and led by Katharina Prüm, picked its Kabinett fruit between mid- and late October in this vintage. The house method does not change: hand harvesting in tries, slow spontaneous fermentation, long lees ageing in traditional Fuder and release with the light reductive spritz that has always marked these wines in youth. Kabinett here is the estate at its most transparent — low in alcohol, crystalline in fruit, with acidity that makes the modest residual sugar read as almost dry. Prüm describes the wines of this vintage as textbook examples, each carrying a clear stamp of its vineyard, with power building from Badstube through Graach to Wehlen.

Enjoyable now as an aperitif but much better after five to ten years; serve at 10–12°C with sashimi, tuna tartare or a lightly dressed crab salad.
