Joh Jos Prüm Graacher Himmelreich Riesling Spätlese in magnum is a Mosel Spätlese from Graach, in the format that ages most slowly.

Himmelreich is the largest of the Joh. Jos. Prüm sites, a wide sweep of grey-blue slate on the hillside between Graach and Wehlen, and it gives the racier, more citrussy reading of the estate's style. Spätlese remains light in body — alcohol usually sits around eight per cent — but intensity and depth of character step up markedly from the Kabinett, with more flesh, more power and the substance to meet richer cooking, without necessarily reading as sweet. What the estate looks for is a balance between elegance, freshness, racy fruit and a savoury, slate-driven minerality. Fermentation is slow and cool, bottling waits until the wine has settled, and in magnum its development is slower again.

Already fine, and it will keep gaining depth for decades in this format. Serve at 8–10°C with roast chicken, pork belly or a plate of charcuterie.
