Joh Jos Prüm Graacher Himmelreich Riesling Spätlese is a Mosel Spätlese from the slate slope above Graach, in the estate's most versatile category at the table.

Joh. Jos. Prüm took its present shape in 1911, when the family holdings at Wehlen were divided, and the estate has been directed by Katharina Prüm since the early 2000s. Graacher Himmelreich, its largest site, is a broad expanse of grey-blue Devonian slate on the slope between Graach and Wehlen. Spätlese here stays light in body while flavour intensity and depth of character rise markedly over the Kabinett: there is considerably more depth of fruit, expressed as flesh and power rather than as obvious sweetness, alongside the elegance, freshness and savoury, slate-like minerality that mark the estate out. Katharina Prüm regards this level as the most versatile of all at the table. The wines ferment slowly and cool, keep their natural sugar and are released late.

Thrilling to drink now, and set to gain depth and complexity for decades. Serve at 8–10°C with roast pork, duck or a mildly spiced noodle dish.
