Joh Jos Prüm Graacher Himmelreich Riesling Spätlese is a Mosel Spätlese from Graach, the racier of the estate's principal sites.

Himmelreich occupies the slate slope running from Graach towards Wehlen, and Joh. Jos. Prüm has worked it since the estate took its present form in 1911. The house style is unmistakable: slow, cool fermentation, long ageing before an unhurried bottling, natural residual sugar and alcohol that seldom reaches double figures. At Spätlese level the wines are still light in body, but flavour intensity and depth of character increase markedly over the Kabinett, with more flesh, more power and enough substance to meet richer cooking, without obvious sweetness. Graach itself reads racier, more citrussy and more herbal than Wehlen, and that clarity is part of why Katharina Prüm treats Spätlese as one of the estate's great food-wine categories.

Drinking well young and capable of twenty years or more. Serve at 8–10°C with schnitzel, roast pork belly or a mild Thai salad.
