Joh Jos Prüm Wehlener Sonnenuhr Riesling Auslese in magnum is the estate's Auslese from its home slope above Wehlen, in a format built for the cellar.

Wehlener Sonnenuhr rises in steep terraces of blue Devonian slate above the river, named for the sundial set into the hillside in the 1840s so that pickers could tell the time, and Joh. Jos. Prüm is the site's best-known owner. Auslese at this address is a question of intensity rather than sweetness. The bunches are picked later and riper with essentially no botrytis, so the wine keeps a pure, fresh and finely drawn line while gaining depth, flesh and persistence over the Spätlese. Wehlen is the rounder, deeper and more stone-fruited of the estate's sites, against the racier, herbal profile of Graach. The wines ferment slowly and cool, retain natural residual sugar and finish low in alcohol, and a magnum's slower maturation suits a category that Katharina Prüm says changes dimension entirely with age.

Approachable now, but patience is rewarded, and a magnum will reward it for decades. Serve at 8–10°C with pork, terrine, venison or a spread of charcuterie.
