Joh Jos Prüm Wehlener Sonnenuhr Riesling Auslese is the estate's Auslese from its home slope, the sundial vineyard above Wehlen.
The Sonnenuhr is a steep, south-facing wall of blue Devonian slate named for the sundial built into the terraces in the 1840s, and Joh. Jos. Prüm has been its defining producer since the family holdings were divided in 1911. At Auslese level the shift is more about intensity than sweetness: the fruit is picked later and riper with almost no botrytis involved, so the style stays pure, fresh and finely drawn. There is a clear step up from Spätlese in depth, flesh and persistence, yet the wine remains poised and digestible, and Katharina Prüm is careful to say these are not sweet wines in the conventional sense. Site character is vivid across the range — where Graach is racier and more citrussy, Wehlen is rounder, deeper and more stone-fruited. Fermentation is slow and cool, and alcohol stays low.
Wonderfully tempting young, though Auslese gains another dimension with time. Serve at 8–10°C with schnitzel, roast chicken, charcuterie or a savoury tart.
