Joh Jos Prüm Wehlener Sonnenuhr Riesling Auslese GOLDKAPSEL 2023

This is a Goldkapsel Auslese from Wehlener Sonnenuhr, the great south-facing slate amphitheatre that gives the Prüm estate its most celebrated wines.

Mosel Riesling is grown on steep slopes of weathered Devonian slate above the river, where the stone holds heat and the gradient forces every task to be done by hand. Joh. Jos. Prüm, at Wehlen, has been the standard-bearer for the region's delicate, low-alcohol style since Sebastian Prüm's division of the family holdings in 1911, and the estate is now run by Katharina Prüm. Goldkapsel, the gold capsule, is not a legal category but an estate designation: as Katharina Prüm describes them, limited lots made from the strongest selected grapes of the best Auslese of a vintage, with more concentrated juice and usually a measure of botrytis. Making them took several passes through the vineyard and severe selection at the picking table, and roughly a third of the fruit came in botrytis-affected. Fermentation is spontaneous in the estate's traditional cellar and the wines are bottled with a good deal of natural residual sugar held in balance by high acidity. Wehlener Sonnenuhr, named for the sundial built into the slope, is the most refined of the estate's sites.

Delicious young but built to last decades, losing sweetness and gaining harmony as it goes. Serve at 8-10°C with fruit-based desserts or crème caramel, or with blue cheese and spiced savoury dishes.
