Joh Jos Prüm Wehlener Sonnenuhr Riesling Auslese Goldkapsel is a small-lot gold-capsule Auslese from the estate's benchmark slate slope at Wehlen.

The Sonnenuhr rises steeply above the Mosel on blue Devonian slate, named for the sundial set into the terraces in the 1840s, and Joh. Jos. Prüm has been its defining producer for a century. Katharina Prüm runs the estate in the established house style: long, cool, unhurried fermentation, plenty of natural residual sugar, low alcohol and bottling without haste. Goldkapsel sits above the ordinary Auslese without being a separate legal class. Only a small quantity is made, from repeated passes through the vineyard and draconian selection, using stronger grapes with more concentrated juice and usually a measure of botrytis. The result is another considerable step up in power and weight. These bottlings can age for many decades, gradually losing sweetness and gaining greater elegance, harmony and complexity as they go.

Cellar it if you can; young, it suits robust savoury cooking, non-blue cheeses or a simple fruit dessert. Serve at 8–10°C.
