Joh Jos Prüm Wehlener Sonnenuhr Riesling Kabinett 2020

Wehlener Sonnenuhr Kabinett is the most tightly wound of the Joh Jos Prüm range, and one of the Mosel's classic bottlings at this level.

The Sonnenuhr above Wehlen is a steep wall of blue Devonian slate, named for the sundial built into the slope in 1842, and Joh Jos Prüm farms a large share of it. At Kabinett level the site gives a wine of very low alcohol with real density on the palate, the acidity so firm that the small amount of residual sugar can read almost as dry. The estate, run by Dr Manfred Prüm with his daughter Katharina, is famous for how inscrutable its young wines can be, and this is often the most closed of the set on release. Fruit is picked by hand in several passes, whole bunches are pressed, fermentation runs slowly with ambient yeasts in stainless steel, and no wood is used at any point. Bottles then sit in the estate's cellars before release.

Recommended to the patient: a few years will do a great deal, and it will keep for fifteen or more. Serve with oysters, poached chicken or fresh goat's cheese at 8-10°C.
