Joh Jos Prüm Wehlener Sonnenuhr Riesling Spätlese comes from the estate's home slope and sits in what Katharina Prüm regards as its great food-wine category.
Wehlener Sonnenuhr is a steep, south-facing slate slope above the Mosel, named for the sundial built into the terraces in the 1840s, and Joh. Jos. Prüm has been its leading owner since 1911. At Spätlese level the wines are still light in body — alcohol rarely reaches double figures — but flavour intensity and depth of character increase markedly over the Kabinett. There is more flesh and more power without overt sweetness, and the estate's slow, cool fermentations and long ageing before bottling give the brightness and balance that runs through the range. Wehlen is the rounder and deeper of the estate's sites, set against the racier profile of Graach, and that difference shows plainly at this level. The Prüms describe this style as charming and classic at the same time.
Approachable young and good for two decades or more. Serve at 8–10°C with roast pork, smoked trout or a mildly spiced Asian dish.
