Joh Jos Prüm Zeltinger Sonnenuhr Riesling Auslese comes from the downstream continuation of the Wehlen sundial slope, at Zeltingen.

The Sonnenuhr slope runs on past Wehlen into the parish of Zeltingen on the same steep bank of blue Devonian slate, and Joh. Jos. Prüm has held vines there alongside Wehlen and Graach for generations. At Auslese level the step up is one of power rather than simply sweetness: the fruit is riper and more intense, but the style stays pure and ultra-fine, adding flesh, complexity and length to what the Spätlese already offers. Differences between the vineyards become more obvious at this level, not less. Fermentation is slow and cool, the sugar is natural, and alcohol stays low enough that the wine remains digestible through a meal rather than confined to the end of one.

Approachable young for an Auslese, and very long-lived. Serve at 8–10°C with pork, game birds, ceviche or a range of cheeses; spice does not trouble it.
