Jonathan Didier Pabiot Pouilly Fumé Aubaine 2020

Jonathan Didier Pabiot Pouilly Fumé Aubaine was this grower's first single-terroir bottling, from stony limestone at Tracy-sur-Loire.

Pouilly-Fumé lies on the right bank of the Loire opposite Sancerre, and its finest sites sit on caillottes, a weathered Portlandian limestone that leaves the surface thick with stones. Aubaine is hand-harvested from one hectare of Les Champs de Cris, a plateau high above the river that Pabiot describes as a joy to work. The winemaking is identical to that of his Luminance cuvée, so the difference between the two comes down purely to terroir: the grapes are pressed, fermented with indigenous yeast and raised in concrete for eighteen months, with no oak involved at any stage. The long concrete élevage builds texture and settles the wine without adding flavour of its own. Aubaine translates roughly as something to appreciate, and it is the more approachable of the pair.

Drink over the next five to eight years. Serve at 10–12°C with oysters, goat's cheese or grilled whiting.
