Jonathan Didier Pabiot Pouilly-Fumé Léon is the domaine's principal cuvée, assembled across all three of its soil types.
Pouilly-Fumé faces Sancerre from the right bank of the Loire and grows Sauvignon Blanc on three main soil types, all represented here: caillottes, the shallow limestone gravels; terres blanches, the heavier Kimmeridgian marl; and silex, the flint that gives the appellation its smoky reputation. Formerly bottled as Florilège, Léon draws on mature vines in the lieux-dits Les Champs de Cris, Les Asserts, Villiers and Les Champs Piot, all densely planted at 10,000 vines per hectare and cropped at around 30 hl/ha. Some 80% of the crop was fermented and raised in concrete cuve and stainless steel, with 20% barrel-fermented juice blended in for complexity. The wine spent twelve to eighteen months on lees to build texture while holding its brightness, and finished at a moderate 13% alcohol.
Drinking well now and worth five years in the cellar. Serve at 10-12°C with grilled fish, oysters or a fresh goat's cheese.
