Jonathan Didier Pabiot Pouilly-Fumé Luminance 2020

Jonathan Didier Pabiot Pouilly-Fumé Luminance comes from a steep, terraced parcel of 50-year-old vines on Kimmeridgian marl at Les Loges.

Pouilly-Fumé sits on the eastern bank of the upper Loire opposite Sancerre, where Sauvignon Blanc grown on Kimmeridgian marl, flint and limestone takes on a firmer, more mineral cast than in most of the wider world. Jonathan Didier Pabiot farms at Les Loges, close to the river. This cuvée, formerly called Prédilection, comes from a beautiful terraced vineyard planted by his father Didier on terres blanches, the local Kimmeridgian marl, with vines now averaging fifty years of age. Active lime content runs above 70 per cent, which makes the vines struggle and gives a saltier, more coiled wine than the estate's Aubaine cuvée. Yields are meagre, at 28 hectolitres per hectare here, and the wine is built on intensity and cut rather than obvious aromatics.

Rewarding now and better still with two or three years in the cellar; serve at 10–12°C with grilled fish, goat's cheese or asparagus.
