Description
Kientzler Riesling Kirchberg is a dry Grand Cru Riesling from the steep terraces that rise directly above the town of Ribeauville.
Kirchberg de Ribeauville is one of three Grand Crus set on the fault line above the village, a south facing slope of shallow, stony marl and limestone that drains hard and pushes vines deep for water. The Kientzler family farm a small holding across Kirchberg, Geisberg and Osterberg from their cellar in Ribeauville, working the slopes organically and picking each parcel separately. Fruit is whole bunch pressed, settled and fermented slowly with indigenous yeast in temperature controlled stainless steel, then left on fine lees through the winter before bottling, with no oak at any stage. The wine is finished dry, at 2.8 grams per litre of residual sugar, so limestone drive rather than sweetness carries the finish.
Taut, saline and built for the cellar, it suits trout, choucroute and hard mountain cheese; serve at 10 to 12 degrees.
