Description
Kracher Eiswein Estate is an Austrian ice wine made entirely from Grüner Veltliner at Illmitz in Burgenland.
Eiswein requires the grapes to freeze on the vine and to be pressed while still frozen, so that ice is left behind in the press and only a small volume of concentrated juice is collected. It is a risky picking, dependent on a hard enough frost arriving before the fruit falls apart, and in the Seewinkel, where the estate more usually relies on botrytis, it is made only when the winter obliges. Gruner Veltliner is an unusual choice for the style: its peppery, savoury edge and firm acidity keep the wine from cloying at 146 grams per litre of residual sugar. Fermentation is slow and the wine is raised in neutral vessels before bottling in half-bottle.
Concentrated and sweet with a savoury lift, it suits apple and pear desserts, custard tarts and mature cheese; serve very cold at around 7 degrees.
