L&C Poitout Chablis 2023

L&C Poitout Chablis is a dry Chardonnay from the Kimmeridgian limestone of northern Burgundy.

Chablis sits well north of the Côte d'Or, closer to Champagne than to Beaune, and its wines are defined by the Kimmeridgian marl beneath them: a bed of clay and limestone packed with fossilised oyster shells laid down in a warm sea around 150 million years ago. That soil, with the cold climate, gives Chablis its taut, saline character. The wine is fermented in stainless steel without new oak, which is the regional norm.

Serve at 10 degrees with oysters, shellfish or goat's cheese. Drink over the next five years.
