Description
La Combe Desroches is a biodynamic Saint-Véran parcel at the foot of the Roche de Vergisson.
Saint-Véran surrounds the Pouilly-Fuissé vineyards in the southern Mâconnais and is planted entirely to Chardonnay on limestone and clay. This 1.5-hectare parcel lies on the north-facing side of the valley below the Vergisson rock, where eroded limestone and clay soils and a cool exposure make for a linear, tightly drawn style. The site was already farmed biodynamically when the Bret brothers of La Soufrandière bought it in 2016, and their own regime has added precision since. Jean-Philippe Bret notes that the grapes reach good ripeness in spite of the cool aspect, and that the vines perform particularly well in warm, dry years thanks to the water-holding capacity of the soil. Two-thirds of the blend was raised in tank to preserve tension, with the balance in barrel.
Drink over the next four to six years with grilled fish, chicken in cream or goat's cheese; serve at 10–12°C.
